Lúc về nhà Tea thấy có 3 hủ chanh muối màu nâu, chắc cũng 3-4năm rồi, tiếc là ko lấy thử uống.
Hôm nay đem mấy lát cam thảo ngâm nc rồi bỏ cranberry ngâm cho mền, Tea sẽ làm chung với gừng + chanh muối rồi sên.
Cách này người ta chỉ làm chanh muối và cách rim luôn. Ko hiểu sao copy và paste phải edit tùm lum mới ra được chữ.
Ô Mai Chanh Tắc Cam thao
10 pounds lemon🍋, skin is somewhat thick. Very time consuming and patience.
5 pounds of sugar
2,pounds of ginger after skin were peeled off
Wash lemon, hand them in a glass jar.
Boil water, add sea salt or Kosher salt in until you taste it salty. Cool down completely then pour it in lemon jar to cover completely them🍋Use a sandwich bag fill with same salt water, use it as a weight for lemon to fully submerged in the liquid. Leave the jar outside in the sun for a few month until water turn yellowish and lemon turn brown. Wash them throughout several times to remove the salted water. Cut each one in half, dry it outside upside down for maybe 2 days.
Cut it smaller, try to take out as much seeds as you can. Grind it in a meat processor, not too small. [Grind ginger (no skin) really smooth
Grind kumquats not too small.
Those grinding, peeling process takes about an hour
Have them all in a very big frying pan.
Cook on the stove under high heat untill all liquid are almost gone. Remember to stir it often otherwise the mixture will stick in bottom of the pan. Normally about 1 hour on the stove.
Now, in a big pan in oven to dry it out for about 5x24 at 150 degrees. Open it twice a day to mix them all up. When you touch it with your hand or nothing sticks on the spatula, it’s done.
You can make small balls, or mix it with licorice. Enjoy.
