Ăn cá như thế nào tốt cho sức khỏe? Ăn đúng cách bạn mới hấp thu được các dưỡng chất trong cá. Để không bị lây nhiễm ký sinh trùng, bạn nên ăn cá sống, bỏ ruột và mật cá khi nấu ăn.

Cá chứa nhiều protein, axit béo omega-3 có lợi cho sức khỏe. Tuy nhiên, phải ăn đúng cách mới có thể hấp thu được toàn bộ chất dinh dưỡng. 

Không ăn cá sống

Theo phó giáo sư, tiến sĩ Nguyễn Xuân Ninh, Viện Dinh dưỡng Quốc gia, cá sống dưới nước, ăn tạp nên rất dễ bị nhiễm các loại độc tố và vi sinh vật sống dưới nước. Các độc chất này tích lũy lâu ngày trong cơ thể có thể dẫn đến nguy cơ mắc dị ứng, tim mạch, suy gan, thận, bệnh về đường tiêu hóa cho người. 

Ngoài ra, gan mật phát bệnh chủ yếu là do bệnh sán lá gan. Người ăn các món sống hoặc chưa nấu chín sẽ mang theo sán lá gan vào cơ thể, đặc biệt là khi ăn thủy sản nước ngọt như cá, tôm, ốc, các loại dễ nhiễm ký sinh trùng do môi trường sống ô nhiễm.

Ký sinh trùng nếu không được tiêu diệt có thể lây sang cơ thể người, thậm chí cư trú trong ruột nhiều năm, phát triển tới chiều dài 1-2 m và gây ra những cơn đau quằn quại.

Không ăn ruột và mật cá

Theo bác sĩ Ninh, ruột cá là bộ phận bẩn nhất do dễ bị nhiễm các loại độc tố và vi sinh vật sống dưới nước hoặc ký sinh trùng như trứng sán, trứng giun và giun xoắn. Do đó, nếu ăn ruột cá phải rửa thật sạch bằng muối, nấu chín, tránh nguy cơ mắc bệnh ký sinh trùng.

Mật cá cung cấp các men, enzim song cũng chứa rất nhiều độc tố như tetrodotoxin, tác hại lên hệ thần kinh gây mệt mỏi, suy hô hấp, rối loạn hành vi. Ăn mật cá có thể bị trúng độc, sốc nhiễm khuẩn, chảy máu cấp thậm chí tử vong. Lưu ý khi chế biến nên tránh làm vỡ mật cá, tránh để dịch mật cá bắn vào mắt.

Không ăn cá khi đói

Người bị gút nên hạn chế ăn cá khi đói để tránh làm bệnh thêm trầm trọng. Nguyên nhân là ăn cá khi bụng rỗng sẽ làm tăng lượng purine chuyển hóa thành dạng axit uric, một loại axit làm tổn thương ở mô, dẫn đến bệnh gút. 

Khi dùng thuốc ho

Theo bác sĩ, người ho lâu ngày và phải dùng thuốc điều trị không nên ăn cá, đặc biệt là cá biển để tránh bị dị ứng. Trong cá biển có chứa nhiều histamine, khi được nạp vào cơ thể quá nhiều có thể gây dị ứng, không có lợi cho sức khoẻ.

Sử dụng thuốc ho hay các thuốc kháng sinh liều cao cũng không nên ăn cá vì có thể gây ra tác dụng phụ không mong muốn.

Ai không nên ăn cá?

Người mắc bệnh gút, dị ứng nên tìm hiểu kỹ trước khi ăn cá để bảo vệ sức khỏe.

Người bị rối loạn, suy giảm chức năng gan, thận nghiêm trọng cũng nên hạn chế ăn do cá giàu protein. Khi tiêu thụ quá mức khiến bệnh trở nên trầm trọng.
Người lớn cần cẩn thận để tránh hóc xương khi cho trẻ ăn cá bằng cách chọn cá ít xương hoặc vứt bỏ hết xương trước khi cho trẻ ăn.
